Where the Gueuze is a blend, the Cru Bruocsella is a single thing — an unblended, three-year-old lambic straight from the barrel. Named after the medieval Latin name for Brussels. Three years in oak means the wild yeast has had serious time to work, and it shows.

More intense and vinous than the Gueuze — funkier, earthier, with an almost wine-like depth. This is for the convert, not the newcomer. The bottle for when you want to understand what lambic looks like without the blender's hand.
