Barsol (short for Barón de Sol) is one of Peru's premier pisco producers, based in the Ica Valley where the Andes meet the Pacific coastal desert — one of the driest places on earth and the ideal terroir for the Quebranta, Torontel, and Acholado grape varieties used in traditional pisco production.
Unlike many international spirit categories, Peruvian pisco is strictly regulated: it must be made from approved grape varieties, distilled to proof (no water added after distillation), and aged in neutral vessels only — meaning the grape character speaks without interference from wood or dilution.
