Founded in 2008 by Ichiro Akuto in the mountain town of Chichibu, Saitama Prefecture, Chichibu Distillery is arguably the most talked-about new whisky distillery in the world. Ichiro, grandson of the founder of Hanyu Distillery, built Chichibu from scratch with a singular vision: to produce world-class Japanese single malt whisky on a human scale, with maximum hands-on involvement at every stage.
The distillery is tiny — annual production is a fraction of a major Scottish malt — and everything is done carefully, from the milling of locally sourced barley to the hand-filling of small mizunara and ex-bourbon casks. Chichibu releases command extraordinary prices on the secondary market, but bottles acquired at retail are invariably among the most complex and rewarding Japanese whiskies you can pour.
