Daftmill Distillery — Scotland's Most Patient Farm Distillery
Daftmill is a farm distillery in Cupar, Fife, founded in 2005 by brothers Francis and Ian Cuthbert on land their family has farmed for generations. The distillery runs only during gaps in the agricultural calendar — typically winter and early summer — producing tiny quantities of whisky from barley grown in the surrounding fields.
Daftmill released its first whisky in 2018 after patient maturation, and what emerged silenced any doubters: a beautifully balanced, orchard-fruited Lowland single malt with remarkable elegance. Each release is small, allocated, and quickly claimed by those lucky enough to access it. This is whisky made without compromise or commercial pressure — just two brothers, their farm, and as much time as it takes.
