Cantillon Cuvée St. Gilloise
Named after Saint-Gilles — the municipality in Brussels where Cantillon has been operating since 1900. Unlike the Gueuze, the Cuvée St. Gilloise is not a blend: it's a single two-year-old lambic, dry-hopped and bottle-conditioned. The dry-hopping adds an aromatic layer — floral, herbal — that you won't find in the standard range.
Citrus-forward and a touch more aromatic than the Gueuze, with the expected tartness underneath. A good bottle if you want to understand Cantillon's base character without the blending complexity. Less austere than the Cru Bruocsella; more interesting than calling it a gateway.
