Cantillon Vigneronne
Each October, Cantillon receives a delivery of white Italian grapes — currently Viognier, switched from Muscat when they could no longer source organic fruit. The grape sugar softens the acidity slightly compared to the Gueuze, and the Viognier aromatics — apricot, peach blossom, white flowers — come through in a way that makes this feel closer to a white wine than most lambics dare to be.
Delicate is the word. Not weak — the wild fermentation is still doing its thing underneath — but this is Cantillon being subtle. The grape lambic for wine people who are already halfway there.
